Tasty Thursday: Veggie Bake
Mmmmm…veggies…
What, no?
Alright, I’ll admit, I’m not the biggest veggie fan. But we’re trying to eat better, and cut down on food costs, and this dish fits both bills! Plus, it’s delicious. And that’s coming from a non-veggie-lover. 🙂
Ingredients:
2 Russet Potatoes
1 Medium Onion
1 Green Bell Pepper
1 Yellow Squash
1 Zucchini
1-2 Carrots (I used baby carrots because that’s what I had)
Olive Oil
Salt & Pepper
Garlic Powder
Instructions:
{It’s really difficult.}
1. Dice all veggies
2. Toss in Olive Oil & season with Salt, Pepper, and Garlic powder
3. Throw into a 9×13 pan
4. Bake uncovered for 30 minutes at 350 degrees
5. {Optional} Top with shredded cheese and side with freshly baked French Bread & Butter. Yummm… 🙂
This was super delicious, made about 4 servings (2 meals for us!), and cost less than $3. That’s a win in my book!!
