Summer Dessert: Berry Cobbler

Is there anything better? (NO!)
No, it’s not healthy.
Yes, I made (and ate) it anyways.
Yes, it was worth it. 🙂
Here’s the recipe, so you can enjoy it too!!
TO-DIE-FOR BERRY COBBLER
1. Wash and combine 2-3 cups of fresh berries. (I used raspberries and blackberries.) You could use frozen berries too, just rinse and thaw them first. Place in small casserole dish.
2. Add 1/2 cup of sugar, and 2 Tbs cornstarch, and mix mix mix.
3. Combine all of the following in a separate bowl:
1/2 cup flour
1/3 cup brown sugar
1/2 cup butter (at room temp)
[CONFESSION: I like to double this, for a thicker topping. Cause it’s the yummiest part, let’s be honest!]
4. Once mixed, generously sprinkle mixture on top of berries.
5. Bake in oven at 375 for 40 minutes.
6. Remove from oven and admire your handiwork!! Try to contain the drool.
7. Let cool for 5-10 minutes and then serve warm with ice cream!!
YUM!!!!
I may or may not have to make another one of these tonight because I may or may not have eaten the last of ours for lunch yesterday and I may or may not have an unhappy husband now.
So I have to go buy more berries today. 🙂
But really? I’m not complaining. I’d go for some more too!!

This recipe was soooo good! I made it last night for a get together with another couple. I used fresh raspberries and strawberries, and frozen blueberries and cherries. I doubled the crunch as you suggested. Yum-o! Thank you for sharing it. 🙂
