  1. We love this dish and happen to have loads of grapes and shallots at home but no chicken! Do you think it would work with pork chops? (Maybe I could cook the pork chops on their own for awhile first and then add the rest of the ingredients?)

  2. Sounds great! I was so inspired to try this, I went out and got the stuff that day. Do you think it will be ok with boneless, skinless chicken thighs? My husband doesn’t like the skin or bones in chicken. We’ll give it a try. Thanks for sharing!

  4. This looks so good! And easy. Which is my criteria for trying a new recipe. 🙂 My hubby has an aversion to eating chicken with bones or skin–do you think this would work with boneless skinless chicken breasts? I am definitely pinning it! Thanks for sharing. And I totally agree with your decision to postpone big lifestyle changes for the time being. I’m also pregnant and eating right is such a challenge, but there are small choices we can make that make a big difference. Good luck!

  5. I’m intrigued by this. The idea of cooking grapes seems weird to me, and they never last enough in the fridge to make it into a dinner recipe anyway… BUT, you are so convincing in your praise for this dish that I think we’ll be trying the whole cooked grapes thing at my house! Pinned!

  6. Oh, how lovely both those recipes sound. My kids love, love, love their fruit and veg which really helps our whole family. My 6 yro son is a deliberately healthy boy, he likes homemade, he likes to know what has gone into a meals and says he can taste ‘tin’ when I give him baked beans. He makes me read cookie labels in the shop to make sure it has sugar and not sweeteners. So, that helps us all be very aware and make better decisions. Blessedly, he isn’t completely weird and does like chocolate and things.
    When we do well here is when I am on top of the meals because my dh is convinced chips are a vegetable and therefore perfectly good served with a ready made pizza as a healthy meal. Frozen chips (fries for you guys.)
    I agree, Kayse, it is much easier to go with healthy you know and gradually introduce new things than to dive into a whole new regime. As for a 600 page book, ha-ha, I should be so lucky. I am currently reading Thomas the Tank Engine loooonnng and very un-thrilling books to my happy little lad and Winnie the Pooh to my daughter because ‘trains be too boring for mine ears, mummy!’ I am so with the girl.

  7. We like to eat the rainbow- the kids absolutely love it. We have red sweet peppers, orange sweet peppers, yellow squash or beans, green zucchini or beans, and purple cabbage. We put it all in a pan with either olive oil or butter, garlic powder, salt, and pepper. Cover and stir until it is a little soft, but is not mushy. We sometimes add cooked chicken to this as well. I was amazed- I didn’t think my kids would eat this as they usually only like green beans- but I think it is the whole rainbow idea. We separated them on their plates and they ate them one by one down the rainbow! Now they ask to eat the rainbow!
