My Famous Chicken Chili
Ok, so it’s only famous if you know me, and then because it’s the only one I make. But still. It’s awesome.
I use ground chicken (thank you, Fresh and Easy!) since it’s MUCH healthier, and in chili you really can’t tell the difference. I also don’t use beans, cause…well…ew. We are not bean fans in this house.
Also, I usually make this in the crock pot. But, of course, the time I planned to take pictures is the time I forgot to prep everything with enough time to do the whole crock pot thing. Sigh. But it works just as well in a regular old pot, so there you go.
Ingredients
- 1lb Ground Chicken
- 28oz Crushed Tomatoes
- 14oz Diced Tomatoes
- 1 Onion, Chopped
- Enough Chili Powder, Cumin, and Garlic Powder to taste. Or just a pack of chili seasoning.
- A dash of Red Pepper Flakes
Directions
- Brown chicken in a skillet. Drain.
- Chop onion.
- Dump all ingredients into Crock Pot. Cook for 4 hours on low….
- OR..Dump all ingredients into pot on Medium/High heat. Stir until warmed throughout.
- Serve hot, topped with cheese and sour cream. Yum!
Did I bombard you with enough pictures of chili to make you sufficiently hungry? Good. Go make some chili. It’s still good in the summer {I guess it’s technically still spring, but it sure doesn’t feel like it here!}. I promise. 🙂
