Meatloaf is usually a love it or hate it kind of food. My mom was an awesome cook, so I always loved it. I also am obsessed with love Italian food. So this recipe caught my eye, and it’s made a meatloaf lover out of many a hater! While there are quite a few ingredients, they are all pretty common {so I’m guessing you have them on hand}, and the prep goes pretty quickly!
Ingredients
1 lb ground chicken (or ground turkey)
1 egg
1/4 breadcrumbs
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1-2 cloves garlic, finely minced
1 small onion, grated
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup grated Parmesan cheese
1/2 cup pasta sauce (homemade or store bought)
1/2 cup shredded Italian cheese blend
minced parsley for garnish
Preheat the oven to 350 degrees. Make sure your loaf pan is coated in cooking spray. This is muy importante, unless you plan on just eating it out of the pan, in which case it won’t matter so much.
In a large bowl, combine the ground chicken, egg, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper and Parmesan cheese. Plop this into the loaf pan and top it with pasta sauce.
Cook for 40-45 minutes! Top with some shredded mozzarella cheese and italian herbage for extra yumminess.
{This makes a super-great freezer meal. If you want to prep it ahead of time, or make it for a friend who could use a dinner, just put the mixture in a disposable loaf pan, top with sauce and cheese, and then freeze. When you’re going to cook it, just make sure it’s completely defrosted first.} 🙂
